Butter Steamed Babies

Ingredients

  • 2 lbs baby potatoes
  • 1/2 C butter
  • 1/4 C water
  • 1 t salt, or to taste
  • 1/2 t pepper, or to taste
  • Additional toppings, as desired

Directions

Prep: 10 Minutes; Cook: 25 Minutes

  • In a medium saucepan over low heat, add the butter, water, salt and pepper
  • Scrub the potatoes and peel a strip away from each of the potatoes
  • Add the potatoes to the saucepan and cover
  • Cook over low for 25-30 minutes, rolling potatoes around in the pan occasionally as they cook, but without removing cover
  • Topping options: parmesan cheese, chopped parsley, or red pepper flakes
