Ingredients

  • 2 lbs baby russet potatoes
  • 1 lb pkg bbq pulled pork
  • 1/2 tspn garlic powder
  • 1/2 tspn dried parsley
  • 1/4 cup melted butter
  • 1/2 cup shredded cheese
  • 2-3 sliced green onion
  • salt & pepper

Directions

Prep: 7 Minutes; Cook: 23 Minutes

  • Preheat oven to 400 degrees
  • Wash potatoes
  • Microwave potatoes in glass dish with a lid for 10 minutes or until fork tender 
  • Cut in half length ways and poke inside flesh of each half several times
  • Sprinkle dry spices, salt & pepper
  • Drizzle melted butter
  • Spoon BBQ pulled pork onto of each half
  • Bake 10 minutes
  • Add cheese and bake 2-3 minutes
  • Top with green onion and sour cream if so desired - ENJOY!
