Buttery Potatoes with Bacon

Ingredients

  • 2lbs baby russet potatoes
  • 1/2 cup butter
  • 1/2 lb cooked bacon, chopped 
  • 12-15 pearl onion (or 1 med onion cut into chunks)
  • 2 Tbspn minced garlic
  • Salt & Pepper

Directions

Prep: 5 Minutes; Cook: 35 Minutes

  • Wash potatoes in cold water then move to a pot.  Fill pot with water just to cover the potatoes.  Sprinkle with 1 Tbspn salt.  Bring to rapid boil and let boil 6-7 minutes. (They will not be all the way cooked at this point.)  
  • As your potatoes are boiling put butter into large cast iron skillet over medium heat.  Melt then let simmer, slowly stirring 3-4 minutes.  
  • Drain potatoes and add them to the cast iron skillet. 
  • Now add garlic, onions, cooked bacon, salt & pepper.  
  • Cook over medium heat, slowly stirring, about 15-20 minutes or until potatoes are fork tender.  
  • Enjoy!
