Directions
Prep: 5 Minutes; Cook: 30 Minutes
- In a microwave safe dish with a lid add washed unpeeled baby russets and microwave for 10 min or until potatoes are soft when pierced with a fork
- Let potatoes set 2 minutes and dice into 1 inch chunks
- Melt butter in a cast iron skillet or large saute pan on Med High and add the potatoes, salt and pepper and garlic powder
- Saute until potatoes start to brown about 10 min
- Add the ham and saute for 5 min
- Add the shredded cheese and remove from heat and set for 5 min until the cheese is melted
- Enjoy!
