2 Idaho Russet potatoes
1/2 T olive oil
1 t onion powder
1 t dried parsley
1 T taco seasoning
salt and pepper to taste
sour cream to top
cheddar cheese to top
bacon bits
heart-shaped cookie cutter
Directions
Prep: 20 Minutes; Cook: 20 Minutes
Preheat oven to 450
Slice potatoes into large rounds
Cut rounds into heart shapes
Combine potatoes, olive oil, and seasoning, and toss to coat
Roast potatoes in oven for 20 minutes, or until crisp
Remove potatoes from oven and top with cheese
If needed, put potatoes back into oven for 5 minutes
Top with sour cream, chives, and bacon bits as desired
