In a medium saucepan, cover potatoes with water and lightly salt the water, bring to a boil. Reduce heat and simmer until potatoes are tender, about 15 to 20 min. Drain and lightly mash, leaving some chunks.
In a large skillet cook chorizo and drain well, remove to a separate bowl. Add cubed smoked sausage to skillet and cook for a couple of minutes and add the chorizo back into the skillet along with the potatoes and mix well.
Add a 1/2 cup of the filling to a warm tortilla and sprinkle with cheese fold in half, repeat.
In a large skillet heat oil over medium heat. Add 1 to 2 filled tortillas to the skillet. Cook until crisp and golden brown, turning once. Drain on a paper towel.
