Potato Foil Packet with Summer Sausage and Red Pepper
Easy Flavor Packed Potato Packet
1 lb Baby Russets or 3 medium potatoes
1 Small Red Onion
1 Small Red Pepper
8 oz. Summer Sausage
2 Tbs Olive Oil
3 Tbs Butter
Salt and Pepper
1 Tbs dried Chives or Parsley
2 tsp Garlic Powder
Shredded Cheddar Cheese
Prep: 10 Minutes; Cook: 40 Minutes
Wash and cube potatoes into 1 inch cubes. Place in medium bowl.
Cut the Red Onion, Red Pepper and Sausage into chunks and place in bowl with potatoes.
Put 2 Tbs olive oil and seasoning over the potatoes and toss in bowl to evenly coat.
Lay a sheet of Aluminum Foil out and grease with 1 Tbs butter.
Place Potato mixture onto foil and place pieces of remaining butter on top.
Close foil packet, being sure to seal all openings.
Place on grill and cook for 40 min turning over halfway through.
Let cool for 5 min before opening. Top the potatoes with cheese and serve with Sour cream.
Serve in foil and enjoy!
